I'd never attempted cheesecake before but I'm really happy with how it turned out.
It ended up being a bit of a family affair as I got hubby to crush the biscuits and candy canes. (He had the genius idea of whizzing them in the Magic Bullet which worked beautifully).
Baby sat in his high chair watching us with great enthusiasm - especially when I attempted to crush the candy canes with the rolling pin making lots of noise!
The candy cane bits through the cheese filling make it a beautiful pink colour. The crumbed mint bubbly chocolate on the top doesn't look too appealing but tastes yummy!
We were rather impatient and tried our first slice before it was properly frozen so it looks a bit wobbly in this picture....
If you're in the UK I'm guessing the closest thing to Arnotts Mint Slice is probably Mint Viscounts (I totally just searched for that old "I vant a viscount" advert on youtube but no joy!)
And on a pretty much unrelated note - I came across the recipe via Kiwi Mummy Blogs and then realised the blog belongs to one of the Scrappin' Patch DT (Design Team) members - such a small world!

So glad you and your hubby enjoyed the recipe, Katie. I was wondering about crushing my candy in my hand-held mixer thingie, but I didn't want to break the mixer! I might try it next time, since you had success with yours.
